Malin’s Coconut Cake

Malin has not been involved in the baking process, but the Swedish name for the baking is Malins Kokoskaka which translates so ­čśë ­čśÇ


Ingredients for this cake:

The cake layer:

4 eggs
6 dl or 510 gram sugar
150 gram margarine
6 tablespoons cocoa
2 teaspoons vanilla sugar
a pinch of salt
3 dl or 180 gram flour

The glazing:

200 gram coconut flakes
2 dl or 170 gram sugar
1 dl syrup
1 1/2 dl whipping cream
75 gram margarine

Additionally: serve with passion’s fruit and whipped cream sprinkled with cocoa powder. It really adds some taste! ­čÖé

Baking steps:

1. Mix the eggs and sugar. Add the margarine and mix. Then add cocoa, vanilla and salt and mix.

2. Add flour and mix and then pour the batter into a baking pan covered with parchment paper. Bake at 200° C for 15-20 minutes. In the meanwhile, you can prepare the glazing.

3. The glazing: mix margarine, sugar, syrup, whipping cream, and then add the coconut flakes. Stir the mix while keeping it on low temperature on the stove for about 5 minutes.

4. Take the cake out of the oven and spread the coconut glazing over it. Now it should go back into the oven for 10 more minutes. Once the glazed cake has cooled down a bit you can cut it in pieces and serve! I hope you enjoy Malin’s coconut cake!
